Gluten Free. A traditional and extremely good Tuscan dessert cake, the mix consists of Italian chestnut flour, pine nuts and raisins in the correct proportions and is suitable for Vegans. It is made with olive oil and either some rosemary according to legend, for love, or fennel seeds. Really an excellent traditional dish which goes back generations and one to impress at any dinner party. Goes incredibly well with coffee or with sweet dessert wine like Vin Santo or a Moscato. 250g
Recipe for 4-6 people. Combine the mix with about 4 cups of water, a pinch of salt and some extra virgin olive oil the aim is to make a dense but fluid consistent mixture. Butter an oven proof cake dish, pour in the mixture and cook for about 40 mins. In the last 10 mins of cooking, add a rosemary twig, slices of apple or some fennel seeds.
