I had no intention to include a jam in my catalogue. Then I tried Ferrari Farms jam based in unspoilt Cicolano, Lazio. Giorgia didn't even try to sell them to me, she simply offered me a spoon and a warm knowing smile and asked me to try and she didn't need to. Wow! Giorgia is so passionate about doing things naturally and using local varieties grown without chemicals.
The area, near Rieti, was first recorded in 761ad and was then called the Valley del Salto and the farm lies high up in the Apennines at an altitude of 700masl with its pure mountain water and air, surrounded by oak and chestnut forests abundant with game and wildlife and completely natural and uncontaminated. These 70% fruit jams are just the purest and most flavoursome I have ever tasted and in no small part due to the local varieties and the purity of the region from which they hail.
The overriding flavour is the sweet tasting natural flavour of top quality uncontaminated local organic fruit from over 500 trees and not the sweetness of sugar as is the flavour of just so many jams these days. They are superb in yogurt and outstanding with cheeses, with salumi and with game, pork and lamb. But I would say eat just them with good bread, simply, and taste the fruit. All jars are 175g and cost £3.69
- Fig Fico – Fig jam is one of the best to eat with cheeses and figs were the classic accompaniment to Parma Ham PDO and not melon. Lovely in desserts for example on a tart.
- Tomato - yes tomato Jam, sweet and sticky and bursting with summer flavour, this is for spreading on bread with butter and eating. It really is very good.
