You can choose from 5 different types:
- Orecchiette - used traditionally with Cima di Rapa to make the national dish of Puglia 'Orechiette e cima di rapa' with garlic, anchovies, chilli and a splash of Puglian wine.
- Trofie - used traditionally with Pesto Genovese in Liguria. Pesto is not usually eaten with Spaghetti in Liguria so to eat Pesto faithfully, you need Trofie pasta.
Macheroncelli - 2 inches long, slightly curved, they hold tomato sauce. Full stop - a great sugo makes this a marriage made in heaven.
